Black Bean Quesadillas
The stars of this recipe are the black beans. Black beans may not look like much, but they're an incredibly rich source of antioxidants.
Per serving size, black beans were one of only five foods containing more than 1000 mg of antioxidants per serving (out of the 100 richest dietary sources evaluated). In other words, they were antioxidant royalty in a group of antioxidant stars.
The other ingredients in this simple recipe also provide extra servings of skin-saving nutrients, especially cilantro and tomatoes.
1 whole-wheat tortilla
1/4 cup cooked black beans
2 tbsp shredded cheese (we use Colby and Monterey Jack)
1. Set tortilla on baking sheet (or toaster oven baking sheet)
2. On one half of tortilla, layer black beans, tomatoes, cilantro, and cheese
3. Fold over tortilla and toast in toaster oven on medium. You can also broil under high heat until cheese melts, usually 2-4 minutes. You can also heat in a skillet over medium-high heat until cheese melts.
4. Serve with salsa
